Mom’s Ground Beef Casserole

This casserole was a favourite with the family when I was growing up. It’s simple, it’s cheap, it’s fast to make and has an easy clean up. Kids love it, too.


1 1/2 cups basmati rice

1 lb lean ground beef

1 can cream of mushroom soup

2 tsp yellow curry

Salt and Pepper


1. Cook rice in 3 cups of water.

2. Brown ground beef in a pan. Drain excess fat.

3. Add cooked rice, soup, curry and salt and pepper to ground beef. Stir.
